Chicken with Pickled Lettuce and Shiitake Mushrooms

A quick and easy stir-fry dish of chicken with shiitake mushrooms and pickled lettuce. Pickled lettuce can be found in Asian groceries. It gives this dish a delicious pickled taste and flavours.

Preparation Time: 30 minutes
Cooking Time: 15 minutes
Makes: 4 servings

600g chicken thigh fillets, diced
12 dried shiitake mushrooms
1 x 380g jar pickled lettuce in soy sauce, drained
4 cloves garlic, minced
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp kecap manis
1 tbsp sesame oil
1 tsp white pepper powder
steamed rice, to serve

Soak the mushrooms in a bowl of hot water for 30 minutes. Drain and squeeze out excess water. Discard stems and quartered.

Heat oil in a frying pan, saute the garlic until fragrant. Add in the chicken and stir-fry until chicken turns white.

Add in the mushroom, stir-fry for 2 minutes. Add in all the sauce and pepper. Stir to mix.

Add in the pickled lettuce, stir-fry for 2-3 minutes until heated through.

Transfer to a serving dish, serve with steamed rice.
