Banana Sponge Cupcake

A very simple and easy cupcake recipe that makes a soft and fluffy sponge like cupcakes.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 12 cupcakes

3 large eggs, cold from the fridge
100g caster sugar
3 very ripe bananas, mashed
150g cake flour, sifted
1/4 tsp baking soda, sifted
1/2 tsp baking powder, sifted
100ml vegetable oil

Preheat the oven to 160C conventional oven. Prepare the cupcake pans with cupcake cases.

Mix the sifted flour, baking soda and baking powder in a bowl. Set aside.

Place the mashed banana, eggs and sugar in a stand mixer bowl. With a whisk attachment, beat on the highest speed for 5 minutes until light and fluffy.

Turn the speed to low, beat in the flour.

Pour in the oil and beat until the batter is smooth and shiny.

Spoon the batter into the prepared cupcake cases.

Bake in the preheated oven for 45 minutes until top is golden and skewers inserted comes out clean.

Remove from the oven and leave to cool on a wire rack. Serve and keep the leftover in an airtight containers for up to 3 days.
