Mini Cocoa Cakes

Tiny tasty treats for tiddly fingers. These mini cocoa cakes are a great choice when it comes to cooking with the kids. Based on the brands I used, each cake is about 52 calories.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: 33 servings

250g self-raising wholemeal flour.
100g dark chocolate
100g half fat creme fraiche
80g margarine
40g Truvia sweetener (or caster sugar if you prefer)
1 tbsp cocoa powder
1/2 tsp vanilla extract
1 egg
80ml almond milk


Pre-heat the oven to 160 ༠C/ 140 ༠C fan/325 ༠F/3 Gas.
Cream the margarine with the sweetener/sugar.

Beat in the egg, vanilla extract, and almond milk.
Mix together the flour and cocoa powder.

Fold into the mixture until fully incorporated.

Spoon the cake mix into fairy cases.

Bake in the oven.
Melt the chocolate over a saucepan of hot water.

Stir in the creme fraiche to form a ganache.

Spread the ganache over the cakes.
