500g peeled king prawns, deveined

1/2 tsp salt
1 tsp soy sauce
1 egg white
1 tbsp cornstarch
a dash of white pepper

50g cornflour, for prawn coating
4 cooked salted duck egg yolk, mashed
1 red chilli, chopped
2 cloves garlic, chopped
cos lettuce leaves, to serve

Mix prawns with all the marinade ingredients. Leave to marinate for 1 hour.

Heat enough oil in a frying pan, dip the marinated prawns in cornflour to coat. Pan fry on high heat for 1 minute until golden brown.

Heat 2 tbsp of oil over high heat. Saute the garlic and chilli until fragrant. Add salted egg yolk, stir constantly to prevent it from burning.

Once it is bubbling, add in the fried prawns. Stir to coat prawns in the sauce.
