Spaghetti Bolognese

Delicious and easy to make spaghetti bolognese, this vegan recipe is sure to be a hit with friends and family.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 5 servings

250grams of vegetarian mince
1 can of diced tomatoes
1 large onion
1 large carrot
1 medium capsicum (optional)
2 medium cloves of garlic
1 packet of spaghetti

Heat 4 tablespoons of water in a large frying pan, on a medium high heat.

Wash, peel and dice thinly the onion, carrot, garlic and capsicum.

Add the onion, carrot and garlic to the frying pan and cook for 5minutes.

Whilst this is cooking, bring a large saucepan to the boil and add a pinch of salt and 5 servings of spaghetti to the saucepan. Cook for 10-12mins, until al dente.

Add the capsicum and vegetarian mince to the frying pan, cook for another 3-4minutes.

Now add the can of diced tomatoes to the frying pan and bring to a simmer.

Cook for another 2-3mins whilst simmering before removing from the heat.

Plate up the spaghetti then sauce on top, season as you please or top with cheese.
