Brown Rice and Red Quinoa Salad

Two of my favourite things at the moment, brown rice and quinoa. So good for you, and now you can buy them mixed so you can cook it together. White rice is out, brown rice is in.

Brown Rice and Red Quinoa Salad

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 4 as a main, 6-8 as a side dish

For the Salad
1 cup of uncooked brown rice and red quinoa mix
2 cups vegetable stock
3/4 cup of cherry tomatoes halved
3 spring onions finely chopped
1/3 cup of corn
1/2 cup black pitted olives
4 tablespoons of cashews
2 tablespoons of sunflower seeds
2 tablespoons of coriander roughly chopped
8 baby cos lettuce leaves

For the Dressing
2 tablespoons of soy sauce
2 tablespoons of lemon juice
1 clove of garlic crushed
salt and pepper to taste
4 tablespoons of almond oil

In a small bowl mix together all dressing ingredients and set aside for later.

Dressing should look like this

Cook the brown rice and quinoa mix wih stock according to packet instructions. Sun Rice brand is 25 minutes for 1 cup of rice to 2 cups of liquid.
While it is cooking place your cut tomatoes into a colander over a bowl and season them with salt. The salt will draw out all of the excess liquid in the tomatoes.

Salt your tomatoes to drain excess liquid

Drain your olives and corn and place in a large bowl
Chop up the nuts and place in the bowl with the sunflower seeds, add chopped corriander and spring onions.
When rice is cooked allow it to completely cool before using.
Wash and pat dry the lettuce leaves and place four standing up in your serving bowl.
Cut remaining lettuce in to four, and add to corn mix.
Add dressing to the corn mix and mix well.

Now the rice is completely cooled add it to the bowl and mix through.
Spoon rice salad into the centre of your serving bowl.
Serve alongside a nice piece of meat, or serve as is for a great vegetarian dish.

When I first made this salad we ate it 4 hours after it was prepared with the dressing on, and the lettuce was still crisp. So this is something you can make ahead of time.
