Chocolate Coconut Bars

These are really simple to make and always go down a treat. Friends always ask for the recipe and I'm a little embarrassed how easy it is! These chocolate coconut bars are quick to whip up and require no heavy machinery (food processor).

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 35 squares

125 grams butter
1/2 cup brown sugar - firmly packed
1 cup desiccated coconut
1/2 cup plain flour
1/2 cup self raising flour
1 tablespoon cocoa powder
1 egg

1 cup icing sugar
1 tablespoon cocoa
1 teaspoon soft butter
1 tablespoon milk
1 tablespoon coconut

Melt the butter over a low heat then stir in sugar, coconut, sifted flours, cocoa and lightly beaten egg.

Pour mixture into a greased tin, 28cm x 18cm works well.

Bake in a moderate oven for 20 minutes.

Remove from the oven and spread with prepared icing whilst the base is still hot, and sprinkle with coconut.

Sift icing sugar and cocoa powder into a bowl. Stir in the soft butter and enough milk to make a thick paste.

Apply icing to the slice when it is still hot, spread gently but evenly and sprinkle with coconut.

Allow to cool in the tin for 10 or more minutes and then cut into bars or squares.

Keeps well in an air tight container.
