Mini Mince Pies

I know its a bit late to be thinking about mince pies now, but there is a good reason for making them. At least there was for me. When I was in the shop the other day, I saw that Sainsbury's was selling all its mincemeat at really low prices. That included their 'Taste The Difference Mincemeat with Cassis'. It had originally been over £2, but is now on sale at 15p. I could not resist the bargain. Based on the brands I used, each mini mince pie should be about 97 calories.

Preparation Time: 45 minutes
Cooking Time: 15 minutes
Makes: 16 servings

300g mincemeat with cassis
150g wholemeal flour
75g margarine
3 tbsp water

To make the pastry, rub the butter into the flour for a breadcrumb like consistency.

Add the water to form a dough, then wrap it in cling film and chill it in the fridge for ten minutes.
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.

Roll out the pastry and using a cookie cutter, cut out thirty-two rounds.

Line cup cake trays with sixteen of the rounds for the base.

Fill each one with one heaped tea spoon of mincemeat.

Put the remaining pastry rounds over the top for the lids and make a small incision in the top.

Bake in the oven.
