Spiced Pikelet and Bacon Skewers

Canadian folk love their pancakes, bacon and maple syrup. Iíve invented a little twist on that recipe to make it fun, cute and easy to serve.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 12 servings

2 cups self-raising flour
ľ tsp salt
1 tsp cinnamon sugar
A pinch of ground cardamom
A pinch of ground nutmeg
4 tbsp caster sugar
2 eggs
1 Ĺ- 2 cups milk
2 tbsp melted butter

Youíll also need
12 skewers (approx)
24 pieces of rindless shortcut bacon
Maple syrup

Spiced Pikelet and Bacon Skewers

Sift the dry ingredients into a medium sized mixing bowl and make a well in the centre.
Add the eggs and gently stir them into the dry mix.
Add the milk until you get the texture you want: runnier mix makes thinner pikelets, thicker mix makes thicker pikelets.
Melt the butter and stir it in to the mix.
Heat a frying pan and cook the bacon Ė donít overcook as crispy bacon wonít go onto skewers.
Place bacon on a paper towel to drain the excess fat.
Prepare a clean frying pan with some butter and cook small rounds of the pikelet mix. If you own a pancake pen or a squeeze bottle that makes it easier to cook small rounds.
Cut the bacon into pieces about the size of your pikelets.
Skewer the pikelets and bacon and serve with maple syrup.
