Pop-Rock Cookies

This is one for the kids, or those who are still kids deep down. Cookies plus lollies, what's not to love? Especially with the cheeky addition of tingly crackly pop-rocks.

These cookies make for an excellent party game for kids birthdays, just lay out a selection of toppings and give everyone the chance to craft the perfect cookie with their own favorite lollies.

Preparation Time: 15 mins
Cooking Time: 10 mins (5 mins per batch)
Makes: 20 cookies


140g Butter, softened at room temperature
1/2 cup white sugar
1/2 cup brown sugar
1 tsp vanilla essence
1 egg
1 1/2 cups Plain flour
30g cocoa powder
1 tsp baking powder
1/2 tsp salt

100g dark cooking chocolate
50g butter
2 tsp pop-rocks
1 packet of Wizz Fizz (or other sherbert)
Any lollies you like. I went with Cherry Ripe bits, jelly babies and mini M&Ms.

Pre-heat your oven to 180 Celcius and line three trays with baking paper.

Chop your butter roughly into 2cm cubes and put in a medium sized bowl with the two sugars and the vanilla. Cream everything together until it forms a gravelly mixture with no lumps.

Add the egg to the butter and sugar mixture and stir briefly before adding the remaining dry ingredients. Keep stirring until everything is combined with a consistent texture.

Now form the mixture into individual cookies. It will be fairly damp so you'll need to use your hands. Each cookie should be about the size of a golf ball.

It doesn't matter if they're not very precise, these are for your kids, not your dinner party guests.

Lay the cookies out on your lined trays. They don't spread very much so there's no need to space them out too much. Flatten them a little with a spatula.

Bake cookies for 5 mins or until just set. You don't want them to change in colour at all. Be very careful here, burnt cookies taste terrible.

Rest cookies on a wire rack until completely cool.

Whilst the cookies are cooling, make the topping.
Set yourself up a double boiler on the stove. To do this, add some water to a saucepan but keep the level shallow and then put it over a warm stove-top. Use a medium sized heat safe bowl that will sit in the top of your saucepan without touching the water level. This way, your bowl is heated gently with the steam from the simmering water.

Break the dark chocolate in squares and put it into your double boiler along with the butter. Stir continuously until the majority of the chocolate has melted. Then take the bowl off the saucepan and continue to stir until everything is completely melted and combined.

When you are ready to start topping your cookies, set out all your lollies within easy reach and call on anyone who wants to help out.

Add the pop-rocks and the Wizz Fizz to the chocolate mixture and stir lightly until just combined.

Using a butter knife, spread each cookie with a generous coating of chocolate mixture and decorate with your favorite lollies. For extra crackle and pop, sprinkle any leftover pop-rocks over the top.

Cookies are ready to eat right away. It's best to eat them the same day as the pop-rocks will start to lose their crackle after a few hours. To save time, you can make the cookies several days in advance and just make the topping on the day.
