Easy to make chicken stirfry with 2 minute noodles. Perfect for those evenings when you don't have the energy or inclination to cook anything complicated.

500g chicken thigh fillets, cut into small pieces
1 Onion, chopped
1 Small Eggplant, chopped
2 Cloves Garlic, crushed
1 Packet 2 Minute Noodles
Heat oil in frying pan.
Add onion and garlic to the frying pan and cook for 2-3 minutes, until onion is soft
Add chicken and eggplant and fry until chicken is brown, stirring occasionally
Place 2 minute noodles in a bowl and cover with boiling water. Leave noodles for 2-3 minutes until softened
When chicken is cooked, add 2 minute noodles into the pan (without the water). Stir noodles into the chicken/eggplant mixture
Drizzle Soy Sauce over stir fry and mix well. Cook for another 1-2 minutes. Serve immediately.
Note: You can substitute eggplant for other vegetables such as zucchini, bok choy or snow peas or use a combination of vegies.
