Have you ever wondered what to do with celery leaves, other than add them on top of the compost heap or throw them into the garbage bin?

By simply baking the celery leaves, you can create seasoning that is cheap, easy and quick to make which will enliven the taste of food particularly soups, pasta, risotto, eggs, fish, chicken and vegetables such as beetroot, sweet potato and tomato.

It’s a seasoning that should definitely be added to your spice and seasoning rack. It also adds another layer of taste to a Bloody Mary cocktail.

Instead of discarding celery leaves, bake them and add a little salt to make a very versatile seasoning.

Cooking Time: 5-10 minutes
Makes: 75g (approximately)

Celery Leaves from a Bunch of Celery
1 Teaspoon Sea Salt

Celery Leaves and Salt is all you require to make Celery Salt.

Pick the leaves off the celery, wash and pat dry with a paper towel.

Spread the celery leaves onto a baking tray, being careful not to overlap the leaves.

Pre-heat an oven to 160°C and place the baking trays into the oven.

Bake the leaves for approximately 10 minutes – you want the leaves to become dehydrated and crispy but not burn, as this will impact the taste.

Remove the trays from the oven and allow the leaves to cool.

Bake the leaves until they are dehydrated and crisp, then allow to cool before crumbling and adding salt

Transfer the dried leaves into a small bowl and use your fingers to crumble.

For any leaves that remain slightly under-done, simply return to the oven to dry further.

Add the sea salt to the crumbled celery; transfer to a sterilised jar with a sealed lid.

The Celery Salt will keep for months in a pantry or cupboard.

I make a fresh batch of celery salt every-time I buy a bunch of celery and simply add to my current jar, creating a never-ending supply of this wonderfully flavoursome seasoning.

Store Celery Salt in a jar with a sealed lid and it will keep for months in the pantry.
