This unusual combination of foods is something quite different from the "normal" curry dishes.

It mixes sweet bananas with tart apples and curry, and then is placed around a bed of brown rice and garnished with boiled eggs.

It is a quick recipe as the banana does not need much cooking and really only gets coated in the curry mix and heated.

Serve it with salad or vegetables, the pleasant taste of apple and bananas curried, will make this a winner at a dinner party, or perfect for a casual weekend meal.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
50 g brown rice
A bit of butter for frying
tsp salt
About 125 ml water
1 hard boiled egg
2 bananas
1 small apple, peeled
onion, chopped
dessertspoon curry powder, or to taste
Juice of a lemon
About 10 g wholemeal flour

Method
Wash the brown rice and boil for fifteen minutes in fast boiling, salted water.

Meanwhile, for the curry -peel and chop the apple and onion and fry in butter for about 5 minutes.

Stir in the flour, curry powder, lemon juice and a pinch of salt, and gradually add the water.

You may need to add a bit more water


Stir the sauce till it boils, and then lay the skinned bananas in the sauce and heat, adding a little more water again if necessary.

Heap the hot rice on a dish and surround it with the bananas and sauce, and then garnish with a chopped, boiled egg.
