Looking for a way to use up the left over veggies from my Tofu Stir Fry, I decided to make a cous cous dish. It makes for a filling, low kcal meal. The ingredients are easy to remember because almost everything measure out to 100g. Based on the brands I used, each serving is about 189 calories.

Preparation Time: X minutes
Cooking Time: 20 minutes
Makes: 3 servings

100g cous cous
100g aubergine
100g red sweet bell pepper
100g baby white mushrooms
2 tomatoes
500ml boiling water
1 Knorr vegetable stock pot
2tsp soy sauce
2tsp coconut oil
1tsp mixed dried herbs


Chop the aubergine, bell pepper, mushrooms, and tomatoes, and mix with soy sauce and mixed herbs
Fry in coconut oil.

Simmer the cous cous in boiling water for ten minutes, while stirring in the vegetable stock pot.

Drain the water and mix the cous cous with the vegetable mix.
