Garlic and Chilli Tomato Noodles

This is a super quick and super yummy recipe that's great for lunch or dinner.

Makes: 2 servings

Ingredients
1 brown onion, diced
1/2 head of broccoli
2 large tomatoes
Lee Kum Kee chilli garlic sauce
2 x 220g packets of hokkien noodles

Method
Cook onion in a splash of oil in a frypan. Meanwhile, boil water and chop broccoli into small pieces. Pour the boiling water over the broccoli in a small bowl and leave for a few minutes. (Or longer, but we like our broccoli very crisp!) Drain the broccoli and leave to the side.
Roughly chop up the tomatoes and throw into the pan when the onions are almost translucent. Add the garlic and chilli sauce and leave til boils, while stirring occasionally. Stir through the noodles and then the broccoli and serve.

Feel free to change the ingredients - capsicum, tofu and bok choy make nice additions. If you don't have any chilli garlic sauce, use soy sauce or oyster sauce as a base.
