Microwave Bread and Butter Pudding

This recipe is a super quick and easy dessert, and a great way to use up stale bread!


4 -5 slices bread, buttered and roughly torn. (can also use rolls)
1.5 tablespoons cinnamon
1/5 tablespoons nutmeg
1/4 cup sultanas, or other dried fruit of your choice
1 cup milk
4 eggs ( only two yolks)
1/2 cup sugar or honey
2 teaspoons vanilla essence

Preparation time: 10-15 minutes
Cooking time: 8 minutes
Makes: 4 servings

Lay the bread in a shallow baking pan or microwave proof dish.
Mix together wet ingredients and pour over bread

Sprinkle cinnamon and nutmeg over the top and scatter dried fruit

Let soak for 5 minutes
Microwave on high for eight minutes.
Serve with custard or cream.

If you want to make a this dairy-free, you can substitute the milk for oats, or unsweetened almond milk.
