Post Workout Meal

When you work out it is imperative to refuel the body, and supply it with nutrition-dense foods. This is a post-workout breakfast that is a balance of protein, and complex vegetable carbohydrates that will satisfy your hunger and your gut.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 1/2 servings

Ingredients
1 egg
1 bacon rasher
Half a sweet potato
Half a ripe avocado
3 cherry tomatoes
A plaintain
A hanful of kale

Method
Start on your sweet potato. Boil in a pan of water, and leave to boil for at least 10 minutes.
Chop the plaintain length ways and fry on a medium heat for 10 minutes
While they are cooking chop the tomatoes and add to the plantain for the last 5 minutes
Fry/boil/poach your egg (5 minutes if you like it runny, 8 minutes if you like it hard)
Grill the bacon for 8 minutes
While the food is cooking slice the avocado and arrange nicely on the plate.
Remove the sweet potato and remove the skin. Mash it in a bowl with a fork and season with black pepper. Add to your plate
The tomatoes and plantain should be done by now, transfer to the plate and add the egg, bacon, and garnish with some raw kale



Superfood post-workout breakfast done. Now dig in and re-fuel.
