Massaman Beef & Potato Curry

This curry is rich and scrumptious. Perfect for winter or special occasions.

Preparation Time: 20 minutes
Cooking Time: 3 hours
Makes: 6 servings


500g chuck steak
2 large potatoes
2 cup coconut cream
2 tbsp massaman curry paste
1 cup chicken stock
1/2 cup peanuts
1 cinnamon stick
2 bay leaves
1 tbsp ground cardamom
2 tbsp brown sugar
1 tbsp tamarind sauce
1 tbsp fish sauce
2 tbsp oil

To prepare the steak, remove any gristle and cut into small pieces.
Peel the potatoes and cut into small pieces (the same size as meat).
In a large pot brown the meat in the oil.
Add the curry paste, cardamom, brown sugar, tamarind sauce and fish sauce and cook.
Once the spices are cooked, add the stock, bay leaves cinnamon and potatoes.
Bring to the boil and then allow to simmer until the sauce starts to reduce.
Add the coconut milk and simmer for about 2 hours.
Stir it occasionally to check the tenderness of the meat and firmness of the potatoes.
Continue to cook until tender.
When the curry is nearly ready add the peanuts.
To prepare the rice, boil a large pot of water and add the rice.
When the curry is ready serve on a bed of rice with rotti bread.
