Tomatoes and parsley grown by myself
This is a fairly easy recipe, and has the vegetables in the rice, so it can be served on it's own or with a side salad or baked vegetables.
It is also quite a healthy meal and especially if you use home made broth which can be vegetable if you are vegetarian, or chicken soup
This savoury cake can be made ahead, and is great as it is also very nice served at room temperature, and therefore also suitable as party or buffet style food.

Whole large broccoli (about 250 g)
2 garlic cloves, crushed
1 onion, chopped
1 large yellow capsicum, sliced
3 tbsp butter
2 tbsp oil
1 large cup risotto
½ cup dry white wine
3 - 4 cups chicken soup
or vegetable broth.
125 g Parmesan cheese, grated
3 - 4 eggs -I always buy extra large eggs so 3 was enough
Tomatoes for garnish (optional)
Parsley for garnish (optional)
