Sweet and Savoury Cheesy Pineapple Casserole

I seem to be making a lot of sweet/savoury dishes lately and this one is great, as I ate it for sweets as well as an accompaniment for a meal! It could also be eaten as a casual meal, perhaps on weekends when you do not feel like cooking a complicated meal!

Pineapple always goes well with cheese however in this casserole, I have added some sugar as well giving it a lovely semi-sweet taste with the slight bitter-sweet taste of pineapple, and the added saltiness of the Ritz crackers.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

215 g crushed pineapple
215 g pineapple pieces
¼ - ½ cup sugar
3 heaped tbsp self raising flour
1¼ cups strong flavoured grated cheese
1 cup Ritz Crackers, crushed
¼ cup butter, melted

Preheat the oven to 160° fan forced.

Crush the Ritz biscuits either in a plastic bag or in a food processor or similar.


Drain the two different pineapples


Put them in a bowl with the sugar, flour and cheese.


Combine this carefully until it is well mixed.


Spray a small casserole dish with oil spray or butter, and spoon half of the mixture in.

Add half of the Ritz crumbs as a layer on top.


Repeat this process ending with the Ritz crumbs, and then add the melted butter on top of the crumbs.

Bake in the oven for about 20 minutes or until the top has turned a golden colour.


Leave standing for about five minutes, and then cut into squares or to your liking.


Serve as a main, accompaniment, or as a dessert with cream.
