Simple Healthy Avocado and Scrambled Egg Breakfast

As I have a cooked breakfast every Sunday, and as I had avocadoes left over, I decided to combine my usual eggs with the avocado.

My first idea was a very wholesome, healthy breakfast, however I then decided to add some shortcut bacon and some of my home grown tomatoes and garlic chives to the breakfast, and the result was excellent!

Taking only ten or so minutes to prepare and cook, it was quite a large breakfast using just one large egg and a small avocado.

Preparation Time: 5 minutes
Cooking Time: 10 - 15 minutes
Makes: 1 large serving

1 x 700g egg
1 small avocado, sliced
A few small tomatoes
2 rashers shortcut bacon (optional)
Garlic chives

Cut the bacon into pieces, and cook for about 5 minutes or till just starting to brown.


Add the halved tomatoes after a few minutes.


Beat the egg and add some cream or milk and some of the chopped garlic chives.
Take out the bacon and put it on some paper towel to drain.
Add the egg and cook it slowly, waiting till the edges are a bit firm, and then making the soft parts run over the firm parts.


Do not over cook - just cook till it is partly done and turn off the heat -it will continue to cook for another minute or two if you are using a good, heavy frypan.
Add the cut avocado and bacon just before you turn off the heat.


Add some pepper, serve and enjoy!
