My kids love chicken nuggets, but unfortunately their favourites seem to be the more unhealthy processed ones. I've tried homemade nuggets before but the meat never seemed tender enough.
I've finally cracked it and these went down a treat last night. 'Can I have more please' is always what a mum wants to hear at dinner time.
The secret is soaking the chicken in milk to tenderise the meat. I also used panko breadcrumbs to make them a little more interesting so my husband and I could enjoy them too and we could eat as a family.

: 2 servings
2 chicken breasts
Milk to cover
1 beaten egg
2 tbsp flour
Large handful panko breadcrumbs (you could use regular if you can't get hold of this crisp Japanese version)
Sunflower oil for frying
