Crispy Cajun Potato Wedges

This is a crispy comfort food.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 2 servings

1/4 cup milk
1/4 cup mayonnaise
3/4 teaspoon Cajun seasoning, divided
3/4 cup cornflakes
2 medium potatoes

In a shallow bowl, combine the milk, mayonnaise and 1/2 teaspoon Cajun seasoning.
In a different shallow bowl, combine cornflakes and remaining Cajun seasoning.
Cut each potato into wedges, dip wedges in mayonnaise mixture.
Coat with crumbs.
Arrange in a single layer on a baking pan coated with cooking spray.
Bake at 190 degrees for 45 minutes or until tender and lightly browned. Turn once.
