Raspberry Banana Muffins

A beautiful, melt in your mouth banana muffin with the zing of raspberry, these tasty treats are sure to be a breakfast or morning tea favourite.

Preparation Time: 10 minutes
Cooking Time: 17-20 minutes
Makes: 12-18 servings

2-3 ripe bananas
1 cup raspberries (fresh or frozen)
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/2 cups all-purpose flour

Delicious raspberries, full of flavour

Preheat the oven to 175 C. Lightly grease muffin tins.

Add the bananas and melted butter to a large mixing bowl and mash with a fork or wooden spoon.

Mix in the sugar, egg and vanilla.

Gently mix in the raspberries.

Sift the flour, baking soda and salt and add to the mixture. Gently combine being sure not to overmix.

Spoon the batter into muffin tins. Sprinkle the tops with a little sugar to form and golden crust when baking.

Sprinkle a small amount of sugar on top

Bake for 17-20 minutes or until golden brown and set in the middle.

Devour muffins at your leisure
