Vanilla Fairy Cakes

It's always good to have a quick and easy recipe up your sleeve if you're a Mum. These vanilla fairy cakes are perfect to whip up for a kids party or a school bake sale.

Preparation Time: 10 minutes
Cooking Time: 8-10 minutes
Makes: 12 servings

60g caster sugar
60g softened butter
1 egg
1/2 tsp vanilla extract
60g self raising flour
Dash of milk
150g icing sugar
Sprinkles or other decorations (optional)

Pre heat the oven to 180 degrees fan.
Place 12 fairy cake cases into a cake tin with individual sections.
Cream the caster sugar and butter together until pale.

Gradually beat in the egg, little by little.
Mix through the vanilla extract.
Using a metal spoon, fold in the flour until all combined.

Add a little milk to the mixture and mix through until you have a consistency that will drop from a spoon.
Spoon the mixture into each case, it should come to about half way.

Place in the oven and bake for 8-10 minutes, until the cakes are golden brown and when you insert a skewer it comes out clean.
Place the cakes on a wire wrack to cool.

For the icing, mix together the icing sugar with a little water until it's smooth and not too runny.
Drizzle the icing over the top and if you want to make them extra special, you can add sprinkles or other decorations.
