Hot Gherkins

I remember when I used to go to McDonalds as a child and all the burgers had gherkins inside. Gherkins seem to have disappeared these days, but if you want to go a bit retro with your burger or sandwich, making your own is very easy. It does require a bit of patience though, as pickling time is required.


If you want to give your gherkins a bit of a kick, just add chillies.

Preparation Time: 10 minutes
Cooking Time: N/A
Makes: 1 large jar

1 cucumber
Malt vinegar
3 - 8 Dried chillies (optional)

(Optional) Put dried chillies in the bottom of a large jar. How many you use is dependent on how hot you want it.
Using a mandolin, slice the cucumber finely.
Put all the cucumber slices in a jar.
Pour Vinegar all the way up to the top and seal the lid.
Leave the pickled cucumber for at least one week before using.

Add the gherkins to burgers, sandwiches, buns, etc.
