I love curries, but not the carbs that come with the rice or the fat that can come with the sauces. I have recently discovered the wonders of the spiraliser, which allows you to make not only vegetable spaghetti, but vegetable rice as well. This sweet potato rice can be served on its own, with flatbread or curry, and is delicious.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 2 -3 servings
Ingredients
3 spring onions
1 sweet potato
60g peas
1 red pepper
200ml vegetable stock
1 tsp soy sauce
1 tbsp curry powder
Pinch of chilli flakes
Method
Spiralise the sweet potato using a spiraliser, and then pulse in a food processor to turn it into rice.
Dice the red pepper, chop the spring onions, and mix with the sweet potato.
Heat all the ingredients in a frying pan and stir until it starts to bubble; then simmer until the liquid has reduced.
