Soup is somehow "warming" on a cold winter night and it was on such a night that I made this one!
This soup was delightful and my friend and I ate several bowls of it, despite having cooked a main meal also.
The blue cheese, once again, just gave it that extra tang, even though I did not put a lot in.
I used home made vegetable broth
which is far nicer and healthier than a packet or tin soup.
: 15 minutes
: 35 minutes plus vegetable soup base
: 4 servings
2 tbsp butter
1 onion, chopped
1 small potato, chopped
375 g broccoli, cut into florets
3½ cups vegetable broth/stock
75 g blue cheese, crumbled/diced
Croutons, to garnish
