Have you ever had several leftovers, but it was not a balanced meal?
This happened to me a few nights ago, so I decided to make a salad to go with the
falafel, and hash browns that I had left over. I also had some
wonton parcels which I had frozen.
I have mizuna (a type of lettuce which grows like a weed!) growing profusely in my garden so I added a handful of this also to the salad.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings
Ingredients
For the salad
75 g baby bocconcini
1 tomato, chopped
Handful mizuna
Falafel (optional)
For the dressing
Olive oil
1 tsp mustard
Bit of balsamic vinegar
1 tsp honey
Balance of meal
Any leftovers
Method
For the salad
Heat the falafel for a minute or two in the microwave. Leave while you make the salad.
Mix the chopped tomatoes and bocconcini.
Mix all the salad dressing ingredients and put in a screw top jar, and shake.
Add the falafel (I chopped them in half), salad dressing, salt and pepper and mix till it is all coated.
Heat the leftovers as required.
