Green Bean and Pollack Salad

Pollack is the more sustainable fish than cod. It has a similar flavour and works well with greens, tossed in a buttery, parsley sauce. This green bean and pollack salad is a quick and easy way of eating heart-healthy fish and is the perfect take to work meal too.

Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 2 servings

2 Pollack fillets
Handful of parsley
Half tsp black pepper
Half a lime
Handful of spinach
Tblsp butter
Handful green beans
Splash balsamic vinegar

Required ingredients

Wash the fillets and season with the black pepper and lime.

Add the remaning seasoning and butter and place under the grill for 15 minutes on a medium-high heat.

Place the green beans in a sieve over a saucepan of boiling water for 5 minutes.

Remove the beans from the sieve and season with a pinch of salt.

Wash the spinach and place in a large bowl along with half of the butter and vinegar.

Toss and add the green beans.

Place the tossed salad on to a plate and top with the fish fillet.

Either serve immediately, or place in a tupperware box, ready to take to work. This dish works hot or cold, so don't worry if your work place doesn't have a microwave.
