Recently a fast food place was serving some Spicy Chicken Fries, I thought I would try them despite disliking hot stuff. They were super spicy to me, and when I thought to take off the crumbed coating and just eat the chicken, it didn't look too appealing. So I decided I would try make them myself, no spice, but just delicious crumbed chicken breast.
Chicken Fries with Garlic and Chive Aioli

: 1 serving
1 piece of chicken breast schnitzel (see notes)
1 cup of breadcrumbs
1 cup of plain flour
2 eggs lightly beaten
1 tablespoon of chopped chives (2-3 pieces of chives)
1/4 cup of whole egg mayonnaise
1/2 teaspoon of minced garlic
Rice bran oil for shallow frying
1/2 teaspoon of chili powder (optional)
or 1 teaspoon of dried parsley (optional)
Some of the chicken cut into the right shape
Chicken pieces coated in breadcrumbs
Fries cooking, some golden and some waiting to be turned
Aioli made with the 1 tablespoon of water to thin it out a little
The chicken breast schnitzel is a piece of chicken cut to make chicken schnitzels. I bought packet of four at the supermarket. I think is great for this recipe as it is easy to cut and make the pieces look like fries because of the way it has been cut.
