Eggplants are one of those vegetables that can be purchased year round. Its versatility and cultural diversity allows you to incorporate this wonderfully understated vegetable into a myriad of recipes simply by adapting to the season.
Eggplants can be roasted, mashed, fried, grilled, sautéed, made into soup, dips and stuffed. It can be the central focus of the main meal or a side or snack. The universal movement where side dishes are taking centre stage has allowed many chefs and restaurants to tweak their culinary skills to create innovative side dishes which are now outshining the main meal.
So when I recently cooked Eggplant Burgers
, I couldn’t resist coupling the burgers with a side of eggplant fritters.
Eggplant Fritters are a great side dish or snack alternative to potato chips.
: 5 mins
: 10 mins
: 2-4 entree servings
½ cup rice flour
½ teaspoon baking flour
Pinch of salt
¾ cup of ice cold water
Oil for frying
Rice Flour, Baking Flour and Salt make up this light and airy batter.
Add ice cold water to make the batter BUT only stir the batter 10 times.
The batter should be thin but still retain a slightly lumpy texture.
Fry the fritters in hot oil.
Place the cooked fritters onto a paper towel to drain.
Serve the fritters immediately while hot, these can be eaten as a snack, as a side dish alternative to potato chips or simply on their own.
I served these fritters as a side dish to my Eggplant Burgers
with a simple tomato and rocket salad.
