Bacon is usually considered bad for you because it is a processed meat with a lot of saturated fat, but as long as it is enjoyed moderation, it can become part of a healthy diet. Bacon provides protein, keeps you feeling fuller for longer, and if you buy good quality meat and cook it the right way, a lot of the fat gets rendered off.

There has also been a study to show how eating the good fats in avocados alongside saturated fats actually reduces the effects of those unhealthy fats as a sort of counter balance.

It just goes to show that you can still enjoy a treat when you treat yourself in the right way.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1 serving

30g mixed leaf salad
30g croutons
4 cherry tomatoes
1 small avocado
2 rashers of back bacon
Raspberry vinegar

Place the bacon in a plastic tub, cover it with paper towel and cook in the microwave for five minutes.
Place the salad in the bowl and add the croutons.
Quarter the tomatoes, slice the avocado into chunks, and mix into the salad.
Wrap the bacon in the paper towel and press down on it so that all the fat is absorbed into the paper.
Use a pair of scissors to cut the crispy bacon into pieces and mix into the salad.
Drizzle over raspberry vinegar.
