Roasted Rosemary Vegetables are a perfect vegetarian dish or ideal for serving at barbeques with meat and fish.

4 Medium Potatoes suitable for baking
2 Sweet Potatoes
1/2 Butternut pumpkin
5 Sprigs of Rosemary, chopped
Sea Salt and Freshly Ground Pepper
Preheat oven to 200 degrees Celsius
Cut vegetables into bitesize pieces
Place vegetables onto 2 baking trays. Do not use glass baking trays
Sprinkle rosemary on vegetables then season with sea salt and cracked pepper. Pour olive oil over vegetables.
Bake in the oven for 50-60 minutes until vegetables are cooked through.
