Cinnamon Topped Banana Bread

If you want you kitchen to smell like a light storm of cinnamon and bananas, this quick prep, long bake recipe is for you.

Preparation Time: 20
Cooking Time: 1 hour 20 minutes
Makes: 10-12

Bread Mix
1 3/4 cup flour
1/2 cup white sugar
1/2 cup brown sugary
1 tsp baking soda
1 tbsp cinnamon
1/2 tsp salt
2 1/2 bananas (mashed)
1/2 cup vegetable oil
2 eggs
1 tsp vanilla extract
1/3 cup milk

1/2 cup plain flour
3/4 cup brown sugar
2 tsp cinnamon
4 tbsp butter
1 tsp vanilla

Preheat oven to 160 degrees.

In a bowl, mix flour, white sugar, brown sugar, baking soda, cinnamon, and salt. Set aside - dry mix.

In a separate bowl, peel and mash bananas.

Add eggs, cup milk, vegetable oil, and vanilla extract - wet mix.

Pour dry mix into wet mix, and stir contents together.

Pour mixture into bread pan.

In a separate bowl, mix cup flour, brown sugar,  butter, cinnamon, and vanilla. Mix using fork or whisk, finish mixing with hands. (cinnamon topping).

Spread cinnamon topping over mixture in bread pan, make sure to cover it completely.

Bake for 1 hour and 20 minutes, at 160 degrees.
