Number 8 in my brunch/breakfast easy recipes is to make when you have a morning when you have time to sit and slowly eat with that first cup of coffee.
If you don't have nasturtiums in your garden, you can use any other
flower that is growing in your garden, and if you have none, simply substitute English spinach.
It makes a change from plain scrambled eggs, and it could also be a nice omelette if you do not stir it while the eggs are cooking.

Makes: 1 serving
Ingredients
2 eggs
Bit of milk
2 tbsp cheese, grated
Nasturtium flowers
Nasturtium leaves
Method
Wash and pat dry the nasturtium flowers and leaves.
Put the milk and eggs in a small bowl and whisk together.
With the back of a fork, crush the nasturtium seeds, and add them to this egg mixture.
Break up the petals, add the leaves, petals and the grated cheese.
Add some butter to a pan and melt. Add the egg mixture and when it starts to set, stir it from the edges in.
Do not overcook it or it will be dry.
Add some salt and pepper to taste.
Serve with a bit of Parmesan cheese grated over it - optional.
