I recently read about teff flour and decided to try cooking with it. Although I am not gluten intolerant, this is a great product for those who are.
It is described as "an annual grass, a species of lovegrass, native to Eritrea and Ethiopia".
I also made my own almond milk
. If using a commercial one, use less sweetener in the mixture.

1 cup of Teff Flour
(Available from Woolworths)
1½ tsp baking powder
¼ cup coconut flakes plus a bit extra for garnish
¾ cup almond meal (or ground your own almonds)
1 cup almond milk
4 tbsp honey
1½ cups mulberries
