Crunchy Bacon, Banana and Apple Salad

Bacon is on of the most versatile of foods as it goes with sweet, as well as savoury ingredients.

In this recipe I have teamed it with banana and a crispy Pink Lady apple, as well as celery and topped with nuts. The textures of these foods work very well together and the taste is delicious.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Serves: 3

3 rashers short cut bacon, chopped
1 medium Pink Lady apple, or apple of choice
2 small bananas
½ tsp lemon zest
½ tbsp lemon juice
1½ stalks celery, sliced
1 shallot, chopped
1 tbsp chives, chopped
1 tbsp parsley, chopped
Bit more than ¼ cup mayonnaise
1/8 cup yogurt, plain
¼ cup chopped nuts

Fry the bacon until it is browned. If using short cut bacon, there will be no fat.

Bacon can be cut smaller than I did

Mix in with all the rest of the ingredients except the mayo and yogurt.


When it is mixed well, stir in the mayo and yogurt, and stir till it is all coated.

Lasts for 3 days in the fridge if not all eaten.
