This is #16 in my series of brunches, and this one, although sweet if you add maple syrup, is healthy as it has bananas and blueberries in it!
I have put blueberries in the batter as well and if I was not worried about sugar, I would have also added chocolate chips to it!
I did not actually measure the ingredients for this one but made it into a thin batter so quantities are a rough guide only - you cannot go wrong however.

¾ tsp baking powder
1 small egg
¼ cup milk
2 tsp coconut sugar
Grated coconut (optional) for garnish
