Sweet Potato Spaghetti With Kale Pesto

Spaghetti pesto with a difference. Swap carby pasta for sweet potato and ditch the basil for some kale.

400g sweet potato
100g pine nuts
350ml avocado oil
1tbsp lemon juice
1 garlic clove
Spiralise the sweet potato and then steam over hot water for about ten minutes or until soft.
Chop the garlic and steam with the kale for about five minutes or until the kale has wilted.
Blitz the kale and garlic in a food processor.
Toast 75g pine nuts, and then add to the mixture with avocado oil and lemon juice, and blitz again.
Stir into the sweet potato spaghetti with the remaining pine nuts.
