Strawberries, cream, gateau

I made this cake for my mum's birthday, but it would also make a great summertime treat as it is light, fresh, and fluffy.

Preparation Time: 35 minutes
Cooking Time: 30 minutes
Serves: 8

200g self raising white flour
100g margarine
2 ½ tbsp Truvia sweetener (or 125g caster sugar)
4 eggs
2 tsp baking powder
8 strawberries
50g walnut halves
300ml creme fraiche or double cream
1 orange
2 tbsp strawberry jam

Pre-heat oven to 170 ༠C/ 150 ༠C fan/ 360 ༠F/ 5 Gas.
Beat together the flour, baking powder, 2 tbsp sweetener/100g sugar, margarine, and eggs together.
Divide between two sandwich tins and bake for half an hour.

Zest and juice orange.

Whip the creme fraiche/cream, remaining sweetener/sugar, orange zest and juice together.

Spread the jam over one of the sponges and allow it to cool, before spreading half the orange cream over the jam.

Place the second sponge on top and spread the remaining orange cream.
Slice the strawberries and use them and the walnuts to decorate the gateau.
