Edamame Fettuccine

This fettuccine pasta is made from edamame beans, which you should be able to buy at health food stores. It has a stronger flavour than wheat pasta, with a slightly bitter taste.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Serves: 6

200g edamame fettuccine
1 x 400g tinned tomatoes
40 g mini portabello mushrooms
40 g spinach
1 red pepper
90 g cream cheese
1 tbsp ground turmeric
1 tbsp ground parsley
1 tbsp mixed spice

Slice the pepper and mushrooms, the roast in the oven for twenty minutes in an oven pre-heated to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Simmer the pasta in a saucepan of boiling water for seven minutes and then drain.

Heat the tinned tomatoes in a frying pan, stir in the cream cheese until combined, add the spinach and put the lid on until wilted.
Stir in the pepper, mushrooms, herbs, and spices.

Remove from the heat and stir into the pasta before serving.
