Crockpot Baked Potato Soup

Although most baked potato soup recipes call for diced, I made mine a little chunky for that real baked potato feeling.

Preparation Time: 15 minutes
Cooking Time: 3 hours
Serves: 6

Ingredients
1 can cream of mushroom soup
1 1/2 cups evaporated skim milk
3 cups cut up cooked unpeeled potatoes
6 tablespoons bacon bits
3/4 cup diced onion
1 teaspoon black pepper
1 cup shredded cheddar or mozzarella cheese

Method
Spray crockpot with cooking spray.
In bowl, mix mushroom soup and evaporated skim milk.
Add potatoes, bacon bits and onion.
Mix well.
Stir in black pepper.
Cover and cook on LOW for 3 hours.
Mix well before serving.
When serving, top each bowl with cheese to taste.
