This is a great brunch recipe which you make the night before.
It is raw, healthy, dairy free, and low fat, as well as being delicious.
If you need a low fat chocolate fix, this recipe is easy to make, and everyone will enjoy this sweet, but healthy treat.
Preparation Time: 15 minutes plus overnight soaking
Cooking Time: 0 minutes
Serves: 1
Ingredients
½ cup rolled oats (I use steel cut)
½ cup unsweetened almond milk
1 tsp maple syrup, or to taste
½ tsp vanilla extract
1 tbsp peanut butter - no added sugar or salt
1½ tbsp 70% dark chocolate
Bit of banana, to serve (optional)
Method
Put all the ingredients in a plastic bowl (with a lid) or a glass jar.
Stir until it is well combined - I used steel cut oats and they did not go as soft as ordinary rolled oats, and I would therefore use ordinary ones next time.
Put the lid on and put in the fridge overnight.
Next morning, just before you are ready to serve, stir the oats again - you will probably need to add some more almond milk as the mixture will have gone very thick overnight.
Spoon into individual serving dishes, add some sliced banana, and serve.
This brunch was delicious as it was not overly sweet having just the one teaspoon of maple syrup, and it was nice and chocolatey rich!
