Halloumi & Radish Salad

I made this salad using a recipe card from the supermarket, with just a few small tweaks. There's lots of healthy veg with a bit of halloumi cheese as reward for good behaviour.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serves: 2

80g asparagus tips
80g green beans
80g radishes
5 cherry tomatoes
1/2 cucumber
50g watercress
80g halloumi
1 tbsp avocado oil
1 tbsp lemon juice

Steam the asparagus and green beans for about three minutes or until soft, and then place in a bowl with watercress.
Slice the radishes and tomatoes, and then add to the bowl.
Cut the cucumber vertically, and scoop out the seeds. Slice the cucumber into crescent shapes and then add to the bowl.

Slice the halloumi into cubes and then fry on either side for about two minutes or until the halloumi has turned golden.

Add to the bowl along with the avocado oil and lemon juice, then mix everything together.
