Strawberry, Feta and Lime Salad

A simple, beautiful, unusual salad.

Preparation Time: 10 minutes
Makes: Several side servings

Ingredients
1/2 block of feta cheese (approx 100 grams)
1 bag of rocket leaves
1 punnet of strawberries
1 handful of pistachio nuts
1 lime

Method

Rinse the rocket leaves and tear them into a bowl.

Dice the strawberries. (I cut mine into quarters)

Cube the feta.

De-shell the pistachios if required.

Combine the above ingredients and squeeze the juice of a fresh lime over the top. I love the colours!

I love the way the salty taste of the feta is softened by the sweet strawberries in this salad, and the lime adds a great tangy flavour.
