Doughnut Cake

Well it isn’t made of doughnuts, but the kids tell me it tastes just like one! This easy cinnamon afternoon tea cake is perfect with a cup of tea and ever so moreish.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 1 large tea cake

120 grams of salted butter, cubed
1 cup of caster sugar
3 teaspoons of vanilla extract
2 eggs
3 cups of self raising flour
1 ˝ cups of milk
Coconut oil spray
3 tablespoons of caster sugar – for topping
100 grams of melted salted butter – for topping
1 tablespoon of cinnamon - for topping

Preheat oven to 180 degrees (fan forced)
Into a mixing bowl place cubed butter, sugar and vanilla. Mix until pale and creamy.
Add in eggs, one at a time and mix well. Mix will be almost custard like.

Add in flour and milk. Mix for approximately one minute until batter is well combined.
Spray your cake tin with coconut oil and then pour in mixture.
Bake for 45 minutes or until fully cooked. Check with a skewer.
Remove from the oven and turn onto cooling rack.
Combine caster sugar and cinnamon in a small bowl.
Brush melted butter over cake and then sprinkle generously with cinnamon mix.

Serve while warm.
