Indian Style Slow Cooker Butter Chicken

Curry is a great dish to cook in a slow cooker as the meat becomes so tender and the flavours of the spices gently infuse through the dish.

Preparation Time: 15 minutes
Cooking Time: 6 hours
Serves: 4

Ingredients
1 onion
3 cloves garlic, crushed
4 chicken breasts, diced
2 tbsp butter
1 tbsp oil
160g tomato purée
1 tsp garam masala
1 heaped tbsp curry paste
400ml coconut milk
200g plain yoghurt
1 cardamom pod

Basmati rice to serve


Method
Heat the oil and butter in a frying pan over a medium heat.
Fry the onion, garlic and chicken until the onion has softened and the chicken starting to brown.

Add in the tomato puree, garam masala and curry paste and mix through until evenly blended.
Put the spiced chicken mix into your slow cooker, add in the coconut milk, yoghurt and the cardamom pod.

the sauce will reduce down to a thick consistency


Cook on low for 7 to 8 hours and then scoop out the cardamom pod before serving.

This slow cooker butter chicken is great with fluffy white rice.
