My workplace has a few Cumquats tree that we can help ourselves to and this time there was actually a lot of ripe ones, so I have decided to make a cake with them. There are two varieties of Cumquats and these are the Marumi variety which are round and looks like a mini mandarin. They are quite sour so they are not a fruit you can eat on its own.
Cumquat and Almond Cake served with Whipped Cream
: 20 minutes
: 1 hour
For the Cake
300 g Cumquats (or alternative see notes)
125 g butter at room temperature
200 g almond meal
62 g plain flour
225 g raw caster sugar
Rind of half a lemon
235 ml water
For the Syrup
62 g caster sugar
2 tablespoons of cumquat juice (or alternative see notes)
176 ml water
Optional icing sugar and whipped cream to serve
Simmering the fruit
Syrup will be thick like this
Make holes over the top of the cake like this
If you cannot get cumquats you can use 2 medium oranges for the cake, about 2 tablespoons of orange juice for the syrup. The oranges may take a little longer to cook.
