Apple Doughnut Fritters

Serve these warm for the comforting flavour of apple with a texture just like doughnuts. A simple afternoon snack which will absolutely delight.

Preparation Time: 10 minutes
Cooking Time: 3-4 minutes per batch
Makes: 24

2 cups plain flour
1/3 cup raw sugar
2 tsp baking powder
1 tsp salt
cup milk
2 eggs, room temperature
2 tbsp melted butter
tsp vanilla extract
2 sweet apples, diced
vegetable oil for frying
2 tbsp caster sugar
2 tsp cinnamon

In a large bowl, whisk together, flour, sugar,baking powder and salt.
In another bowl, whisk together vanilla, butter, eggs and milk. Pour this mixture into dry ingredients and gently fold together.

Fold apples through.

Heat 5-6 cm of oil in a heavy based pot, over a medium heat.
Drop a large tsp of mix into the oil. Depending upon size of your pan, you could cook 6 or 7 at a time. Be careful not to over crowd the pan as this will drop the temperature of the oil.
Cook for 3-4 minutes, turning once. Mixture will puff and turn a lovely golden brown.

Drain on a cooling tray placed over a baking tray to allow all the oil to drain.

Mix cinnamon and caster sugar in a small bowl.
Cool slightly and dust with cinnamon sugar mix.
Texture is light and fluffy just like a yeasted doughnut.
